It’s summer where you are and here in Brazil the last 3 days have been summer-like so I decided to break out the o’l guacamole recipe & the chips!! When I make this I always get plenty of volunteers for taste tester=)
I hope you have been enjoying your summer days. I do miss the warm weather BBQ’s with family and friends in the good o’l U.S of A.
I can’t be there quite yet but feel free to enjoy the guacamole at you next BBQ with your family and friends.
You will need:
- 3-4 Ripe Avocados
(Use only 2-3 avocados if you live in Brasil because they are ginormous here)
- 2 Tomatoes
- 1 small onion (chopped)
- 1 bunch of Cilantro (chopped without the stems)
- 1 lime
- 1 tsp cumin
- ½ tsp Mexican chili powder
- ½ tsp salt
- Optional 1 Jalapeno pepper, if you like it a little spicy
- 1 garlic clove (minced)
Directions
- Roast the tomatoes in a skillet until blackened, let them cool and peel the skins off. Set aside. (if you are adding the jalapeno roast along with the tomatoes and peel as well)
- Slice avocados in half and using a spoon scoop out the fruit into a large bowl.
- Squeeze the lime over the avocados and stir. Make sure they are well coated.
- Add the chopped onion, minced garlic, cilantro to taste. I use the whole bunch because I love cilantro.
- Cut the tomatoes in half and scoop out the seeds inside and discard them. Chop the rest of the tomato into small cubes. Add them to your bowl. Slice the jalapeno in the same fashion and add it to the bowl.
- Add cumin, chili powder and salt.
- Mash with a potato masher until it reaches your desired consistency
